Breakfast Stuffed Peppers

As a part of my latest book Cracking the Happy Weight Code I have decided to share with you a recipe to get healthy with!


Breakfast Stuffed Peppers
Ingredients:
Four red bell peppers ( any color will do)
16 oz. bag frozen, chopped spinach
Four eggs
1 oz. of shredded reduced fat cheese over each pepper
Optional: You can add a slice of chopped of low sodium bacon or chicken

Directions:
Preheat oven to 400 degrees. Line baking dish with foil.
Cut the top off of each pepper. Remove the seeds.
Place cut out peppers into a baking dish and cook for 15 minutes.
In the meantime, defrost the spinach in the microwave. Squeeze the moisture out of the spinach.
Remove peppers from oven and stuff the bottom 1/2 with cooked spinach.
Crack an egg into the top 1/2 of each pepper.
Bake for 20 minutes longer.
